Bacon Fat Gingersnaps

Ingredients
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup bacon fat chilled
  • 1 cup sugar
  • 1/4 cup molasses
  • 2 tablespoons candied ginger finely chopped
  • 1/2 teaspoon ginger root grated

Ingredients
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup bacon fat chilled
  • 1 cup sugar
  • 1/4 cup molasses
  • 2 tablespoons candied ginger finely chopped
  • 1/2 teaspoon ginger root grated


Instructions
  1. Mix the flour, baking soda, ginger, cinnamon, cloves and salt in a bowl. Mix the bacon fat and sugar.

  2. Beat in the egg followed by the molasses and both gingers.
    Mix the dry ingredients into the wet.

  3. Form the dough into small balls, place them on a baking sheet and press them down with your palm. (a 30 gram ball produces a 3″ cookie)

  4. Bake in a pre-heated 350°F oven until lightly golden brown on the edges, about 8-11 minutes. (the 3″ cookies took 11 minutes)
