Ingredients

  • 2cups


    all-purpose flour

  • 2teaspoons


    baking soda

  • 1tablespoon


    ground ginger

  • 1teaspoon


    ground cinnamon

  • 1/2teaspoon


    ground cloves

  • 1/2teaspoon


    salt

  • 3/4cup


    bacon fatchilled

  • 1cup


    sugar

  • 1/4cup


    molasses

  • 2tablespoons


    candied gingerfinely chopped

  • 1/2teaspoon


    ginger rootgrated

Instructions
  1. Mix the flour, baking soda, ginger, cinnamon, cloves and salt in a bowl. Mix the bacon fat and sugar.

  2. Beat in the egg followed by the molasses and both gingers.
    Mix the dry ingredients into the wet.

  3. Form the dough into small balls, place them on a baking sheet and press them down with your palm. (a 30 gram ball produces a 3″ cookie)

  4. Bake in a pre-heated 350°F oven until lightly golden brown on the edges, about 8-11 minutes. (the 3″ cookies took 11 minutes)
